Merry Xmas friends!!

Merry Xmas!!!!

Its that time of the year again
When holidays are plentiful and the mood is light

To give thanks for the passing of the year with little mishaps
And to remember each and every lesson learned throughout

To start new resolutions for the coming year
And hope that we managed to stick by them til the end

Yes yes I know. I'm currently in a reflective/pensive/thoughtful/whatever-you-call-it mood. Must be the thought of the long weekend ahead...

Let Sleeping Dogs Lie

One afternoon, I was in the back yard hanging the laundry when an old, tired-looking dog wandered into the yard. I could tell from his collar and well-fed belly that he had a home. But when I walked into the house, he followed me, sauntered down the hall and fell asleep in a corner. An hour later, he went to the door, and I let him out. The next day he was back. He resumed his position in the hallway and slept for an hour.

This continued for several weeks. Curious, I pinned a note to his collar: "Every afternoon your dog comes to my house for a nap."

The next day he arrived with a different note pinned to his collar: "He lives in a home with ten children - he's trying to catch up on his sleep."

Friday Food Fiesta (Potato week)

Taken for the Friday Food Fiesta (Potato week)

This is one of my all time fav recipes - Potato salad

3 medium sized red russet potato
3 medium sized normal potato
3 tbsp plain mayo
chopped spring onions (amount depending on preference)
4 pieces of streaky bacon
Juice of 1/4 lime
Salt and pepper to taste

1. Boil the potatoes with skin in salted water til soft and cut into bite sized chunks
2. Fry streaky bacon til brown and crispy and roughly chopped into bits
3. Mixed all ingredients in a large bowl and serve

Notes: Red russet potatoes can be substituted with normal potatoes if not in season but it probably won't taste as good. Likewise with the streaky bacon. For a healthier version of the recipe, 1/2 of the mayo can be substituted with plain yoghurt in which case omit the lime juice.
